½ stick butter
2 cups chopped yellow onion
6-8 red potatoes (sliced)
8 ounces clam juice
4 cups half and half
Fresh thyme leaves
8 oz. Smoked trout, flaked
- Sauté onions in butter in large pot until translucent.
- Add sliced potatoes and clam juice.
- Boil until potatoes are soft; add half and half, trout and thyme
- Simmer until warm. Salt and season to taste.
