Hummus

This is a great, basic hummus recipe. Whip it up as a quick appetizer for guests and serve with pita chips, veggies or warm pita bread! This is a vegan recipe too!

What you'll need....

1 15-oz can of chickpeas (garbanzo beans... same thing)
2 cloves of garlic (1 if they're huge... or more if you REALLY like garlic)
2/3 cup lemon juice
1/2 cup tahini (sesame paste... look for it in the health food section)
1/3 cup of olive oil
2 teaspoons of cumin
dash of paprika
salt/ground pepper to taste


Drain the chickpeas and put in a food processor. Process it to a thickish paste. It won't be smooth. Add garlic, lemon juice and tahini and process until smooth. Gradually add the olive oil thru the food tube while the processor is running. Add spices and process a bit more to mix it well. Add another dash of paprika as garnish.

I love hummus! I always forget to make it though...perhaps because I have to drive 120 miles RT for damn tahini??
