Kickin’ Chicken
Serves 4
Serves 4
3 tablespoons soy sauce
2 tablespoons honey
¼ teaspoon hot-pepper sauce or more to taste
1 tablespoon sesame seeds, toasted
1 teaspoon grated fresh ginger
2 cloves garlic, crushed
4 4-ounce skinned and boned chicken breast halves
Vegetable oil
Combine soy sauce, honey, hot-pepper sauce, sesame seeds,
ginger, and garlic; set aside.
Flatten chicken evenly to about ¼-inch thick.
Coat a broiler pan or an outdoor-grill rack with a thin
layer of vegetable oil. Over medium
heat, grill chicken 2 to 4 minutes on each side, basting frequently with
soy-sauce mixture.
NOTE: May be
garnished with strips of green onion on top. Chicken may be served on top of
curly leaf lettuce.
*Quite sure I made these by broiling them rather than grilling them.
