Brie with Preserves


Okay... pardon the picture.  I forgot to take the picture first and realized it half way through eating it!  

This is an excellent appetizer and is super easy to make.  All you need is a small wheel of Brie or Camembert cheese.  Slice the top rind off but leave the sides.  Spoon some preserves over the top...  I've used both apricot and fig preserves in the past (not at the same time).  How much depends on your taste but you can start with 1/2 a jar. 

Pop in the microwave for about 30 seconds to start.  The cheese should be warm and soft but not runny.  Don't over heat.

Serve with crackers!
